PotatoesThis time of year you’ll find potatoes galore in the warehouse!

Potatoes are delicious and packed with nutrition. This starchy vegetable is a rich source of Vitamin C. This antioxidant vitamin is needed for the growth and repair of tissues in your body. Vitamin C also plays a key role in wound healing.

With the skin left on, potatoes are a good source of dietary fiber—which promotes a feeling of fullness and aids in digestion.

Potatoes are so versatile. You can eat them for breakfast with other vegetables, eggs and/or your favorite protein. For lunch or dinner, you can bake them quickly in the microwave and use them as a substitute for another grain or starch. Top your baked potato with chili or lentils, Greek yogurt and chives, or broccoli and cheese!

Potato Hash

Serves: 4-6

Ingredients

3 large potatoes, peeled and cubed 1” thick

3 tablespoons oil of your choice

½ cup diced yellow onion

1 red bell pepper diced

1 pound Italian sausage (optional)

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper

Directions

1. Bring water to a boil in a large pot. Cook cubed potatoes for 4-5 minutes in boiling water. The potatoes should be slightly soft but still have a bit of firmness to them.

2. (Optional Step) Heat olive oil in skillet on medium-high heat. Add sausage and season with 1 teaspoon of salt and 1 teaspoon of pepper. Brown sausage until cooked thoroughly. Remove and set aside (keep drippings from the sausage in the pan).

3. Add onion to the pan and sauté until slightly brown. Add red peppers and sauté for about 4-5 minutes until red peppers are soft.

4. Season onion and pepper mixture with paprika and cumin. Add cooked sausage (optional) and potatoes. Gently stir as to not break the potatoes and cause mush. Serve hot and ENJOY!

This recipe would also be delicious served with eggs.
